Never tried this combo of flavors.

I also did a Lemon discard quick bread type . Depends on if you like lemon ,
but it's pretty good . Strong lemon flavor .

My wife prefers the wild blueberries from Costco. just a thought
Just got a Costco card , I'll check it out .
I've been using dried with good results .
Cranberry walnut , and cherry walnut .

That discard loaf has my name all over it . Love it .

PS: we love Blueberries here also, we have fresh in the summer in our bushes, But we also get the Costco, or Walmart large frozen berries, they are very good.

Dry ,
2 cups flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda

Wet ,
8TBLS butter melted
1 cup cane sugar
2 eggs
1 tsp vanilla
2 TBLS lemon juice
zest of 1 whole lemon
1 1/2 tsp lemon oil - I used lemon extract at the same rate .
Edit : Opps , 1 cup sourdough discard .


Combine wet and mix .
Combine dry in different bowl and mix .
Add dry to wet and combine , don't over mix .

Bake at 350 for 55 - 65 minutes .

I went 60 minutes , and think that was a bit to long .

Lemon juice and the extract, plus the zest
Yes . Strong lemon flavor , which I like . Mine ate a bit dry , because I think I over cooked it . It's awesome toasted .

Lemon oil is different than extact . The extract subs at a higher rate than the oil , but I just matched it and it was fine .
The food grade essential oils are strong . The extract amount was double the oil , but like I said I just used it at the same rate .
