Left-over Fried Fish Salpicon served with corn chips...

Had a fish fry last friday. This is a great way to utilize the left overs as an appetizer. Very simple. Add lime juice, scallions, cilantro, and a fresh hot chili (I used jalapeno and dried red pepper flake) and a little mayo to flaked fish. Serve with either tortillas or corn chips. Can be served hot or cold.

Al, I'm sure the guys at the firehouse would agree!! But they can't drink on duty. I cooked this as an appetizer last night when I made the frog leg etouffee.
