I find ball tip now and then and never really knew what to do with it.

And thanks guy's life has been a little jacked up around here lately, my Pop's still isn't doing very well at all, after his knee replacement, he had a stomach ulcer erupt, and he lost 5 units of blood, spent a week in ICU, Pop's is 85 yrs old. The Dr called us in, in the middle of the night because he didn't think the old man would be alive in the morning. By the grace of God he is recovering, but the hits keep coming, they just found out that he has kidney cancer in one of his kidneys. It will have to be removed, but he isn't strong enough for the surgery yet. I'm not sure that he ever will be. Dad was a big strong man, he walked his dog 2 miles a day, today he weighs 140 lbs, and he can hardly stand up with a walker.
This has been super tough on me, so I haven't been cooking much, sorry.

I'm gonna star cooking more for Pop's to try to build him back up for his surgery in May, I pray that it works.

I don't handle shit like this very well, so if I'm a little grumpy, or distant, bare with me please.

I feel for you Dan. The last 5 years before my father passed was a lot of medical drama. I wasn't a pleasant person many of those years and especially after he passed.

Local GFS have the same sale. How big is the single sale package?
I'm thinking beef knuckle at Costco Business Center is a better purchase, for the same price.
 
I love Tri-Tips but they have gotten so much more expensive here. I will have to do some looking around for Ball Tips to see if I can find some.

They're 18 pound average . 2 lbs. average each peice . So 8 or 9 to a bag . Trimmed to the blue , so the knife work has been done , and you pay for that . Most things from GFS has to be trimmed / cleaned up .
I was in Coctco last week . Beef knuckle was $5.19 at GFS . Costco was a bit higher , so I passed .
Just checked both stores , and Gordon's is back to $5.69 , same as costco .
Ball tip and knuckle are close enough to the same . Just depends on if you want to do the knife work I guess .

@forktender Look for the Garlic crunch next time you're in Kinders . New one to me , and it's pretty good on everything .

That inglehoffer is made by Beaverton foods . Good stuff .

They used to have tee shirt, before the PC nannies took over the world, that had the beaver laying on it's back, and the shirt said -
"Just Spread a little Beaver on it" 🤪🤣🤣

They make all sorts of mustards and sandwich spreads.
They used to make a Hawaiian BBQ sauce that was outstanding. I don't know why, but I think they discontinued it several years ago. It was great on bbq salmon.

That's one they should have all the time . The price is up 2 bucks over what it was , so I stopped buying them , but when I run out of the bottom round I'll grab one .
You'll need to break it into it's sections . You'll end up with 2 or 3 roasts and some stew meat of grind .
Starts out like this .

Looks like an all purpose cut of beef. I'm not afraid of a little knife work. I'm thinking beef sausage, stew meat and steaks.
I'll hit the closest GFS tomorrow. I also need more nitrile gloves and GFS is the only place I can find them that actually fit.

The Shells hanging on the beam are Abalone shells. Google Abalone diving in nor cal it's fun as hell, I miss it.
The State shut down our season for them about 10- 15 yrs ago, typical CA B.S.

I love that Ingehoffer mustard on corned beef. Never saw that garlic crunch, sounds good. What's weird is a lot of times I see different flavors of Kinder's sauce here, and the Kinder's store doesn't even carry it, kinda bizarre.

The Goeducks are awesome in chowder, fried is clam strips and rings, or ceviche.
They are super firm, they have a little snap to them like a natural casing hotdog, and they are sweet like fresh scallops..
 
That sure looks grreat Dan and I need for fire up my patriotic kettle! Gotta ask for that cut around here.

I like them better than T.T. They are more tender, at least they are the way I cook them.
Side by side the B.T. goes quicker than the T.T. when I cook them for at a party or get together. They used to be a few bucks a pound cheaper than T.T. not any more though, which sucks. People would always say, man this T.T is good, when I told them it was B.T. most people never heard of it.

Growing up the old cattle ranchers would have round up's and feed us/ the helpers B.T. that was cooked on a drum smoker, filled with white oak wood coals. They hug the meat on rebar S hooks about a foot above the coals and would move them around constantly, so no lid was used on the drums. The B.T. a big pot of chili, and macaroni salad, and ice cold longneck's, I remember it well. I really miss those days, life was so much simpler, no computers, no cell phones, yet we still knew who was having a round up and what time to be there. Those were always worth the bumps, bruises, sweat, and lots of laughs...hard work but...real good times!!!
