Labor day brisket

I'm pretty basic on brisket and/or beef ribs. 24hr dry brine with kosher salt. And then on cook day a very light slather of W Sauce, heavy coat of black pepper, and dust it with Lawrys.
 
It's old school approach for me, Texan style. 50/50 blend of Kosher salt and black pepper covering all sides well. Nothing else....
 
Salt and pepper. Eyeballed. Very generous. Applied night before if I have fridge room and feel like it and right before I slap it on the smoker if I don't have fridge room. Day before benefit is that you get some salt into the meat and it overall just tastes a little better.
