Hey guys I just made a batch of pork/venison kielbasa and was wondering how long it will keep in the fridge if I vacuum pack it. Also If I do freeze it does it have any affect on the texture or quality of the product. Thanks

Taste is great I'm very happy with it. I used to use a pre mixed spice from a butcher shop which was fantastic but it had msg in it which isn't very healthy so this time I used Sharon recipe from this site but added marjoram and onion powder. I'm very pleased with it and wouldn't really change much else to the recipe.

Up to 3 weeks vacuum sealed  in the fridge.  After that they can form a slimy film and when reheated you will see white specks on the sausage. Your good for two years in the freezer..  Should be good as the day you made it......

Ok thanks I'm going to seal them up tomorrow and throw most of them in the freezer

Looks good. When I make sausage and I'm planning to freeze a bunch, I add some Amesphos to the mix. Helps to preserve the flavor IMO.

I will agree with the freezing of them. I have actually had summer sausage fall to the bottom. It was 4 years old and still tasted good.

If you are having problems with freezer space for that Keilbasa, just send 'en down, I'll store 'em for you for free!
