Hello,

My name is Nick and I currently live in Jacksonville, FL.  I would say I am an intermediate smoker, as I've been at it for about a year now.  I use a Masterbuilt  electric smoker for the time being.  I like the "set it and forget it" feature and its smaller size so I can load it up in the SUV to take on road trips, etc.  I would eventually like to get into charcoal/real wood smokers, but currently don't have the storage to do that.  I would have to say my favorite piece of meat is the bone in shoulder.  I have also made some pretty killer briskets, chickens, ribs...the usual stuff.  I've mostly used Hickory or Mesquite wood (the cheap stuff from Lowe's).  The reason I searched out a forum is to get advice on techniques for a prime rib.  I have been tasked with supplying the goods for our family Christmas dinner, so I'll be damned if I let everyone down!

I hope to learn a lot from this forum, smoking has become one of my favorite hobbies!
