Roller.... I thought that was a "nepas poofer"...  LOL

Now into a dark closet with the temp at 60* and hum 70% for 5 to 7 days.

 
Looks awesome Roller!   I'm going to try my hand at Kabanosy this week-end.  Question.  You hung yours in a dark closet.  About the only cool place I would have would be the garage.  Its been running around 40 deg. in there all winter.  No clue what the humidity is in there.  Would that be a good enough place to hang them?  Does it have to be dark?   Thanks!
I am no expert on this and it is my first time doing it. Shannon and Rick could answer it better..But the closet was the coolest place in my house. It stays around 50 to 60 * and I raised the humity by placing a bowl of water on the floor. I do not think it has to be in the dark and I was wondering if the dark would be bad.

The wait is killing me because I can smell it all over the house and I have 3 days left. It looks real good and has lost a good amount of its org. weight..I can`t wait to taste it..If it taste as good as it smells I am in for a real treat...good luck guys...
 
Great looking Kabanosy! I'm almost set up properly for sausage making, and can't wait to make some!
