I am new to this forum... have been reading a lot on here but never posted anything until today.
I am considered the official grill master of the family and holiday chef for anything related to meat... however my experience lies on the grill not the smoker.
Over last summer I decided to get a cheapie from wally world and cheapie is being gracious. It rusted out pretty quick... not that I took real good care of it as it sat out in the rain and snow uncovered... lol
I wont go into details but I am moving out of city limits to a house that sits on an acre.... we are consolidating two households into one... of course the one we are keeping is the smallest.
This move has been in the works for a while so I have not invested in a good smoker nor built the smoke house I have drawn up plans for. I might describe the plans and post a new thread under "Smoker builds" later... I have a new CAD progam coming in the mail and maybe I can figure it out and post drawings to get opinions and suggestions.
Anyway, my first real attempt at cold smoking took place on ST Pattys day and I created some awesome cheese and wish I would have bought more cheese... still doing this on a cheap wally world offset smoker...
I also smoked brats, a brisket, a turkey breast and some burgers in totally the wrong order but it all worked out and I semi created my own rub/sauce combo out of some prefab stuff that make it sweet and spicy. I used half of the fresh smoked cheese melted on top of the burgers and the other half is sitting in the fridge... the wait time is almost up.
Anyway... newbie to this forum, newbie to the art of smoking.
