G'Day Bruces!
Did things a bit differently last night. I've done a steak caveman style. Then I did one on the grill. Now I figured out a mod fer the WGA. Not quite SantaMaria style... but worked fer me.
Started with large OP Rib. Salted with my home blend of Rosemary, Garlic, Sage Salt.
In the fridge for several hours while I got busy doing chores around the house.
Set the coals and had a think. I put this trivet for a roasting pan on the WGA upside down. I wanted a slower cook for the steak.
Put on the steak.
Then realised the trivet would nicely hold the wire rack.
So just had to be careful with the flippety flip, using a heat proof glove to hold the griddle.
First rest...
Back on to get to target. Sun going down.
Final rest.
About 20 mins later... Decided to keep it simple with my home pickled onions on the side.
Chop it up.
Turns out for me it was a bit over... but it was still amazing. Next time I just might shoot for 120 internal.
Anyway it was a huge steak and I stopped about here...
It was one of the best steaks I've cooked, but aim to get better. Practice makes perfect they say.
