Mike from Bama here! Have been lurking and reading these forums for some time decided to register and both learn and share hopefully. I have been making Venison jerky for years in a dehydrator and love that stuff.
Until this past year I have been having my deer processed and all my sausages have been done by my processor. Who made some of the finest snack sticks and summer sausage i have ever had! Well long story short he decided to retire and his 2 sons decided they didn't want to continue in his foot steps. I have tried to get his recipes but unfortunately he is reluctant to share at this point. Perhaps he may crank up his business in the future or just wants to keep his recipes to himself! So I am on the hunt for some good recipes! So far I have purchased a grinder, a sausage stuffer and a few other necessities for building sausages. I had been looking for an electric smoker and discovered that Master-built was just across the river in Columbus Georgia and happened to catch a warehouse sale a month or so ago! I scored a 40" Smoke Hollow Digital smoker for $100 and have been pretty happy with it so far. Did my first batch of snack sticks this past weekend and was pleased for my first attempt but think there is room for improvement and absolutely need to work on the recipe!! Looking forward to being apart of SMF!
