Up to a balmy 27 today, shouldn't have to worry about the cheese getting too warm. I've been looking for some cheap gouda for a few weeks now and my wife found some at wally world this past week.

Great find, Gouda is on my to get and try list. Small local store doesn't carry it.
 
How long did you smoke the cheese? Sure took on a lot of color. Nice job.

What flavor wood?
Cold weather smoking can be a challenge. Sometimes it takes on flavor (and color) faster than expected.
Hard part is letting it rest a week before sampling.
 
Looks top notch. Gotta try gouda next time. Usually out of it when I pur hase cheeses to smoke.
