Jerky accessories

My wife got me a new Yoder for Christmas and I'm thinking of making some jerky this week. Any accessories y'all find helpful in making jerky such as racks? Or do you just lay if flat on grate? Thanks

Q-mats from http://www.amazenproducts.com/ are great... non stick and keeps smaller pieces from falling through

Q-matts are nice if you plan on placing the meat right on the grate. You can get them from Todd at AmazeN Smokers.

Vacuum tumbler is nice for marinating.

If you're hand slicing your jerky a good knife is a must.

If your going to make ground beef jerky then one of these is a must have.
