Jeff here from Spring Texas

  1. Hello.  always enjoyed watching the men at my church or whoever working an Offset Smoker as a kid. I recently purchased the BBQ Pro from sears (It is cheap but my friend bought it and has done REALLY well and done some great smoked meats on it).  cooking area of roughly 500 square inches

    doing baby back ribs right now. man the temp is to high, then it is just about right but the wood is all black and looks like it is going out.  I am excited doing them with the 2-2-1 method.

    I wanted a charcoal/wood smoker over a propane or electric (cant afford the electric bill anyway lol).  I just feel like it is true quing or smoking than setting an electric and leaving.  I like doing the work, I like getting to know my smoker.  It is fun

  3. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions
    Post it and you will probably get 10 replies with 11 different answers. That is
    because their are so many different ways to make great Q...
