I'm going to be trying to make some Jalapeno Sausage w/ high temp cheese (snack sticks).  Some told me that if I don't use dehydrated jalapenos that they would turn bad (spoil).  Is this true?  Or have you  heard of this?


It makes sense to me that it might help, especially if you plan on keeping them at room temperature for any extended period of time. I know a lot of recipes call for powdered jalapeno or cayenne instead of real peppers, that would probably be your best choice for smaller diameter sausages.
