Any one in Florida ever smoke an Iguana?

HI! I don,t have a clue !?
But!?. Meadow Creek Smokers , PA. has had info on Alligator cooks.
They put it on a smoker, similar to a pig roast, but the prep obviously was different?
Thinking they are pretty close from the Foodservice Point, both reptiles ?
Ask For Lavern he is their Ambassador . Even if he does not know? I believe he has info to where to go to !

I’m thinking you smoke it then braise, crock or pressure cook it. Maybe Andrew Zimmern has some more details/recipes.

I live in South Louisiana. I have smoked a whole gator a couple of times at LSU tailgate parties when we played Florida. So you are saying smoke it like alligator?

I really Don't know to be honest!?
Never did it?
But I an thinking Iguana has a very tough skin !?
Use a nice Citrus juice pan when you smoke?
Pineapple ,Mangoes ,Orange, lemon, ? Apples
It will help breakdown the protein, which I figure you already know !?
Stuff the body with onions, garlic, Peppers, Hot Peppers as a choice?
Not really sure to cover or not ?
Hawaiian Pig roasts, cover it up , basically sealing it in burlap and burying it?
My Idea would be to have a Citrus broth under it in a pan and rack the meat?
It will break down the protein and give a crisp skin, weather you eat it or not? Kinda Like Smoked fish ,you eat the meat ?

Forget about what I said earlier !
Saw some You Tube videos!
Marinate in Italian Dressing and adapt to yur liking.
Overnight if possible.
Smoke it @ 250 or more?
It will be like a weird type of chicken I am told ?
Kinda remembers me of doing Frog legs as a kid over an open fire!
Its going to dry out the whole body smoking.
Can use a water pan with citrus, will keep it moist But not sure, due to you are eating the meat inside!
I would rather have a semi crisp skin with a more moist meat !
FYI: I used a search and a few You Tube videos.
 
No idea! But the same thought entered my mind when they get cold in Florida and the iguanas start falling out of trees!
I do know beaver and woodchuck are quite tasty!

I didn't read any of this , because the thought makes me ill . Lol .
Well dang it, I read it and now I think Keith should definitely try it! And not a problem with those that don't want to think about it or it makes them ill.
I'm thinking it would pair well with a cold beer or two! Kinda like rocky mountain oysters... missed the days when the local vet clinic put on their yearly feed!

I got no problem eating an Iguana. I read the article, gave me some options. I agree with his idea of skipping a meal a day, but for different reasons, namely for intermittent fasting to keep insulin down. If you eat two big meals, low carb/high fat, with moderate protein-you will not get hungry. Those that don't believe me, eat a whole stick of butter....all at once in one sitting. You will be so full you might want to puke....well, maybe not that bad, but so full you will feel uncomfortable. Most people don't know what really being full feels like. Satiety hormones are all screwed up from eating so often during the day. <rant over>

Don't know what the hub-bub is all about, but don't they eat gator in Florida. I know they do a lot of places in the south. To me... a lizard, is a lizard, is a lizard. A big one tastes like chicken so a small one should taste like quail or grouse. Get over your sensitivities. Food is food. You'd look mighty tasty if we were on an island with no food.
 
I would probably try it, I dont think I have ever turned anything away. There were somethings I tried that I wish I had turned away that is for sure.
