So it was unusually warm up here in the frozen tundra of Canada so I decided to do up some ribs. made a little experiment Italian sausage ribs, just used fennel coarse ground pepper a little kosher salt and some garlic salt and dash of cayenne a paprika for colour.cooked them up at 275 on the stick burner for about 3:30min then brought them in and made up a nice orange zest glaze to finish them in the oven to at 425 for 10 min just to get the glaze caramelized these were very yum
 
Thanks yeah here is the basic recipe I went with
1 tbsp fennel seed, crushed fine
1 tbsp freshly ground black pepper
1 tbsp garlic salt
1 tbsp sugar
1 tbsp kosher salt
1/2 tsp cayenne or to taste
For the glaze (simmer until reduced by half):
1/3 cup brown sugar
1/3 cup orange juice
1/3 cup rice wine vinegar
2 tsp Siracha sauce
1 tbsp orange zest
This was just enough for 1 rack that I did

I'm not a fan of fennel but I may try those they look amazing!Thumbs Up
