nice beef ribs from a top quality butcher. Paid 6$ a pound. It’s like 6 1/4 lbs. doing turkey drum sticks and a pork tenderloin that I paid 2.68$ for. Tiny 3/4 pounder. I’m guessing these ribs are going to take 10 hours hopefully less because I gotta work tomorrow. Burning oak. I was burning my alder for a little bit but wasn’t getting any coals and seems to run hotter then my oak because I can get nice coals with it then toss on a bigger piece and get a longer slower burn , I got some pics of the ribs coming soon with no seasoning. I checked another butcher out the day before I got these. They were 7$ per pound but looked like a lot of marble in the meat and no fat cap like this one. I may go try his next week

Tenderloin cook in 2 hours at 200 degree then I crank it to 225 then it’s at 250 or less now, turkey took 4 hours and pulled them at 175, ribs are at 160 I think. Ribs are looking very moist. Turkey is done in the pic. I pulled the probe out checked both with my handheld thermometer to double check. One said 173 the other 176

I have never seen beef ribs that thick!
I thought it was a pork belly when I first saw it!

Heres how they turned out. At least one pic. They were very rich tasting. Taste like pot roast and brisket. Little much for me. Crazy how much grease was in them. Very juicy

I’ll try and get up more pics. Computer is slow that’s why I didn’t post pics earlier. Took 8 hours tho
 
Wow! im with Al i thought it was a belly and you were making bacon....that is what i pay for beef rib no where near that quality, great buy and great smoke! LIKE!

Thanks Aaron! This one rib weight 2.5 pounds, the bone was under 6 ounces. I think I’ll stick to the back ribs. Got some in the brine they been in since Thursday. Got them from Walmart
