My name's Paul Smith but I'm affectionately known as just Smiff. I'm from a beautiful little township called Fern Tree in Tasmania, Australia and for you guys in the States, Tasmania or Tassie is a small island that hangs south of Australia.
I'm in my 65th year and I'm still selling Ford vehicles to the public and to our state government. A couple of the blokes at work (Tilford Auto Group) shoot and process game into sausages and they smoke some of their produce as well. I thought I'd have a crack at smoking and was lucky enough to come across a reasonably new Chinese dumpling steamer which I have converted into a smoker. It works well but I can't get the heat down low enough without the gas ring continually blowing out.
Can I please have assistance in;
1 how to post photos - I've taken a couple of shots for guys to comment on
2 any suggestions as to how to better regulate the heat
3 whether a gas ring is the right way to go or should I change to an electric element.
I welcome any suggestions and also any questions/comments about where I live, what I do or further information about me.
