My Name is Jay, I live in Houston,TX. I'm a back yard smoker who will do anything from cheese to dessert and everything in between. I've never tried competition but, I've been told several times that I could. I just like to feed people. I have a Brinkmann Trailmaster offset vertical smoker. There are 2 in the pic. The firebox rusted off after several years of use and I bought another one. I patched the firebox hole on the side and now use that 1 as my cold smoker. Just bought a grinder and very excited to try making sausage from scratch.
 
Jay, welcome to SMF!  Glad you are here and bringing the equipment and expertise with you.  Great adaptation on the older Brinkman.

I got the STX-3000 Turbo Force. It's seems to be a workhorse. I went through an 8.8lb pork shoulder on less than 2 min. I'm very pleased
