Hey all ! New to smoking, new to the forum & have a bit of a problem : my sons 2nd birthday is coming up on saturday & the whole thing has spun out of control with the rare spell of good irish weather. I now have 30 people coming expecting good bbq ! I will have the following to cook (on, in my opinion, very limited equipment, hopefuly i am wrong)
5 kg brisket
10 sheets of ribs
40 wings
4 tenderloins
Bbq beans
30 burgers
Hot dogs
Equipment :
Small smoker 18" firebox 2' chamber
Small kettle grill
4 burner gas grill
2 crockpots
Main double oven in house
Have i been too ambitious lads ? Or can i pull this off ? Really need some advice, my main issue & top priority is the brisket, i wannna get that right but i've never smoked one before.... do have to do the old irish thing & get everybody so drunk that they dont remember what a disaster the food was ??? Heeeeellllpppp !!!
 
If you have a vacuum sealer and a croc pot it could help, ribs could be smoked, sealed then slow cooked in the croc night before. Wings could be sealed and reheated bag in water to help also. The brisket I'd definitely want fresh outta the smoker, maybe kept warm in the oven if all else fails, loins also. burgers n dogs done as ya drink beer and smile, pass em out.

Depends on your schedule it can be done...

edit, and come to think of it you could do the same with the ribs as the wings, vacuum seal, fridge, then that day boil water and sink the bag, ... a thought

That's a lot of food for a bunch of 2 yr olds, but I'm Canadian. Just don't give them too much Guinness!

Seriously the suggestions above are spot on. No vacuum sealer, use freezer bags, dip into water to drive out air and seal, into fridge till reheating. No crock pot, quick get one, no two, invaluable for situations like this. Just have fun, think it through and utilize the help and resources available. Extra aprons is a good thought.[emoji]128519[/emoji]
 
You have enough planned to feed 3 times the crew you have coming!

If all goes wrong you have 30 burgers plus the unknown number of hot dogs to feed everyone.

Not sure what you're going to do with all the leftovers!
 
That is a truck load of food planned for the amount of people "saying" they are going to come. You may be a little too ambitious in the amount of food and in my opinion. Be prepared for a ton of left overs. Remember that statistically speaking women and children eat less. You say you have 30 people coming and you have 30 burgers plus a mess of other meats... Keeping things simple helps reduce the stress and anxiety. My sons 1st birthday is right around to corner and i am keeping things simple. Throw a couple butts in the smoker a day or two before make a couple sides and call it a day.

With exception of the wings, you have full portions to feed 30 of each meat. Pick two plus the wings as a starter and you will be fine. Do ahead and reheat as much as possible. You want to enjoy time with your son and guests, not running between grill and smoker.

First Christmas l was married, we had my wife's annual family gathering at our apartment. I went all out, as you are planning, to make an impression on the inlaws. Cooked about 12 hours straight, put out the buffet then started clean up. I finished up and walked into the living room proclaiming, " Let party! " I was talking to an empty room except for my wife and MlL! Everyone else had their fill, exchanged presents and left. I was furious and did not sponsor another party for three years and that was for my oldest girls 1st Bday. At that party, everything was Heat and Eat. I enjoyed the party, not spending hours upon hours cooking...JJ
