I got my brine and everything else ready to go but what temp should the turkey be smoked at and roughly how long will a turkey that size take?

I usually smoke mine around 275 or so. Some go higher than than more like 300. Just smoke it until it hits 165-170.Time will depend on the bird size.
 
I usually smoke poultry at 300-325 degrees and I like to use apple chips or chunks

I to like to get the smoker temp up there about 300°ish or so. That way you can get it out of the danger zone 40° to 140° in 4 hours. Now I would also take it to about 165° in the breast or 170° in the thigh area. Also the higher temps will help you to crisp the skin too. Enjoy and don't forget the Qview.
