Decided to burn a vacation day today just because I have days that need burned.
Visited to local farmers market. Found a few nice zucchini so I could try a great idea Flatbroke shared in chat the other evening.
Zucchini on the smoker.
Seasoned with SPOG and some thyme, basil and oregano.
Thanks for sharing a great veg idea Flatbroke it was very good and everyone enjoyed it.

We had a few pork tenderloins that needed some smoke.
Marinated in an AIP marinade. Which consisted of:
Coconut aminos
EVOO
Garlic
Salt
Ginger


Into the smoker

About a half hour in

Smoked for a little over an hour then sliced

We ended up inviting the neighbors over to enjoy an outdoor dinner with us.
Everyone was full and happy.
Zucchini was a winner. We will be doing that again for sure.
