I smoking a brisket right now and sometimes I get good billowing blue smoke and sometimes I'll get thin puffs of smokes.  Does that matter in how smokey the meat will be or as long as I stay blue all is good.

You will find out pretty darn quick around here that you want the thin blue smoke and not the thick billowing white smoke. The thick white is really btter and you and everyone will know it the first time that you bite into the meat.
 
My brisket was finished and even with THICK BLUE smoke it was amazing and had a great smoke ring.
