A friend just brought over some St. Louis Rib Portions for me to smoke in my MES. I have smoked plenty of St. Louis ribs before, but these are "portions" about 2 1/2 inch wide - do they cook faster than regular St. Louis Ribs? Just trying to get an idea of when to put them on the smoker tomorrow in time to be ready for dinner. Thanks.

I think they will cook a little faster, I would give yourself about 4 hours at 225 or personally I would just smoke them today or early tomorrow if possible and just reheat in the oven 45 minutes before your ready to eat.

You might want to wrap some bacon around them, just for kicks!
