Started this 2 weeks ago smoked them on Monday
(delayed thanks to my internet)
I was able to find some nice meaty hocks again
Made a half gal of Pops brine

In the golden liquid

Rinsed after their 2 week swim into the smoker

Picked up some PB Charcoal pellets I mixed
with some of my Cob Pellets

They did not pick up much color until I
turned the smoker on 2hrs with the trey
3 hrs with the PitBoss at 150°F

These will be in soups or with the Collard Greens
