I want to make meatloaf but no hamburger sales. Albertsons has brisket for $1.57. I have 2 frozen so don't need another but I guess could grind up for hamburger?

Makes great ground burger! Some of the best hamburgers in my opinion. And at that price id jump all over it!
 
That's awesome . I looked yesterday Brisket was $5.00 a pound Ground beef was $11 .
I trim mine out just like I was going to smoke it whole , then grind the whole thing . Just had meatballs made with ground brisket last night . Meatloaf would be fantastic . Fat content will differ , but this is what I end up with grinding the whole thing after some trimming .

Last one I did didnt have a ton of fat content. I just gound the whole thing. It was on the fatier side for ground beef. Looked like a 70/30
 
I never used to believe certain cuts tastes different but brisket indeed does. I find it more beefy and richer and easily my fave. I imagine it would rock on meatloaf. I have not ground it yet but predict once I do we'll never go back to chuck or store bought GB.
 
I found a 9 lb. My friend works in the meat department looked at it and said on the lean side but grind the whole thing and should be close to 80/20. I found hamburger marked 50 off after that and picked up. Will use that today for meatloaf and grind brisket up later. Wonder if could use with that Walton seasoning I just got?
 
No going back gor me . Sam you should try it . I just trimmed out a whole strip loin . Used the clean trim to make sticks . Night and day over store ground
 
Just checked and Sam's has them $3lb for prime. Rich, I'd still like to smoke some, grind point and smoke flat? Other way around?

I like the fatty end of a smoked brisket , but if I was grinding half I would do it as you said .

Try beef knuckle or teres major . Great beef flavor . I smoked the middle section of a beef knuckle yesterday . Smell was fantastic . Getting sliced for sandwiches today .
