hi all, living in QLD Australia currently using a upright gas smoker which I just purchased to replace my charcoal bullet smoker. 

Work in IT as an analyst and part-time foodie who loves anything from bbq to fine dining. Currently got a pork collar (or as you call it Boston Butt) on for its 5th hour, so have been doing some light reading while it smokes away on a mix of apple and hickory. Pork ribs are probably my favourite, and will usually be into Brisket or pulled pork.
