 Every time I have done a search about smoking meats, this page has come up so I thought I would join up and just ask my questions here. 

   I bought my first smoker about 10 months ago mainly for salmon, but I have probably used it more for pork than anything else. I have an MES digital 30, and I just added the cold smoker attachment(should receive it today).

  I served 5 years in the Corps and have now been with the same company for over 20 years. I live in the Puget Sound area of Washington, and if I am not spending time with my family, then I am fishing or hiking.

  So far I have not had anything turn out bad in the smoker, I have done several different cuts of pork, a few beef, a little jerky and 4-5 loads of salmon, and recently my first brisket and turkey. I am getting ready to smoke cheese once I get the cold smoker going and to try and make bacon.
