Hi my name is Jamie I am new to smoking meats I have been smoking fish (salmon) for years in a big chief .On my last week of vacation in early November I built a real smoker and started reading on your site made myself some pork sausage it turned out great so in the last month I have smoked some cheese and nuts and have just finished some back bacon.All the info i need I find on this site all great info and great people I have just ordered my first case of pork belly and can't wait to do up some bacon.Will keep you all posted on how it turns out thanks again for all the great information.
