Hey guys, just bought a brinkman propane smoker, I have done some ribs and a pork butt and some salmon. I live in northern Utah, I work for a highend cabinet shop, is it important for the wood the be green? Does it matter if there's bark on your wood? I did the ecourse it was very helpful. O ya my name is Klay.
 
Welcome, Klay.  I don't use green wood at all.  Green wood will give a heavier flavor and (possibly) give you a creosote problem.  I use only pecan and only a wood burner--never tried electric or propane.  If I'm in a pinch, I will use my bbq grill with briquets and wood chips placed on top.  Bark or no bark is a matter of personal preference.  I don't think it makes much difference one way or the other on the smokes I've done.

First off welcome to SMF there Klay. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

Welcome to the SMF Family...Green wood is not a good choice. It is difficult to burn and can create foul tasting Creosote...JJ
 
Thanks guys for the warm welcome. I am glad to see what u think about the green wood. With my work I can get any wood but it will be all dry, so it sound like I have a good source. What do you guys think of the brinkman gas smoker.
