Hey guys, just bought a brinkman propane smoker, I have done some ribs and a pork butt and some salmon. I live in northern Utah, I work for a highend cabinet shop, is it important for the wood the be green? Does it matter if there's bark on your wood? I did the ecourse it was very helpful.
