help with pork loinback ribs

I am a beginner to the smoking world and I have only done ribs about 10 times before woth varying results. recently I have found a method to achieve ideal tenderness, bark, and most everything else where I cook the ribs unwrapped for 2 1/2-3 hours at 250, then I wrap them and put them on at 275 for another 2 ish hours. However, every time I have cooked them there has been a thin yellow, brown, or gray line in the middle of the ribs with a slightly off color white surrounding it before the start of the smoke ring, and I cant get the juicy white looking ribs that I see pitmasters achieving using essentially the same time amd temperature. what can I do to fix this?

I totally agree with Al. Those ribs look delicious. I'd never even consider complaining about ribs that looked like that and that taste great. You are a winner my friend. Just enjoy the results of your efforts.

They look real good to me.!
It sounds like you have a rib that you & your family likes, just not the color your looking for. The color looks fine to me! Don’t sweat it just enjoy those ribs!

Like others have said, they look fine to me. I found an old pic and they look the same as yours.

As Al and the others pointed out.. the ribs look great.. Some people would pull the membrane off of them, but that's really a personal choice.
 
If those ribs are considered "less than desirable" I have been eating mistakes the whole time.

They look great to me too!

I'm going to try a method I saw from that crazy guy Jeremy on YouTube with mad scientist bbq. It is just using basic salt and pepper as the rub and then scoring the membrane instead of removing it. I just want to see how this turns out for me. Here is the link on YouTube if you are interested. I might give this a go on Monday. I like the no nonsense of it.
