I have heard to use sheep casing for breakfast links, but what I'm wondering is if it's possible to use the regular hog casings and just the smaller tube to fill it?  Does the whole hog casing have to be filled tight?  If I used the smaller tube diameter will the hog casing be to baggy?  What should I do since they're sold out of the sheep casing I was going to use and I need to stuff them tonight?

I wouldn't use the hog casings unless you intend to fill them...you will end up with lots of air pockets. You could always use collagen casings.

Who say Breakfast Sausage has to be skinny links??? I worked for several restaurants in central PA that served breakfast links in the smaller hog casing, 32-35mm, and were huge sellers. The sausage is extra juicy compared to the, IMO, anorexic 19-21mm sheep casing breakfast sausage. Other than snack sticks, all my common sausages go in hog casing...JJ

well, I was sort of thinking the same thing....I could just make them short links at regular hog link girth.  Thanks

There you go...4-5" was what I make and sold. These could be split to fit nicely on a breakfast sandwich. Filled casing are not only prettier but as mentioned above, no air in the casing that causes bursting when cooked...JJ

I like this size also, very universal hogs casing breakfast brat over a big breakfast sausage ring

Now I feel so inferior with my 24-26's

Nice looking links WNC, I'd eat a few of them anyday..

Awesome looking links!

Next bunch of breakfast sausage I make, I think I'll give that a try!
