I'm a farrier in the USA. My wife and I raise our meat for our family of twelve- ten, yes, ten, children. Just trying to make biltong. Have made jerkey in the past but a SA friend says biltong is much better, so giving it a whirl. We make our own corned beef, which is WORLDS better than store bought. We have done bacon and ham in the past but with our cheap smoker was just a pain in the rear and not worth it. Look forward to reading up on ideas.
