Hello I am new here,

    

          I'm very new to smoking, in fact, the only thing close to smoking I have ever done was dry jerky in a dehydrator. I just bought a Masterbuilt 20072115 electric smoker, I, however, have a limitation about 15 years ago I had a gastric bypass so my stomach is smaller than most and I have to be careful when eating meat. I love smoked salmon and other fish and of course jerky.

I am going to try and learn to smoke meats that are tender as they are easier for me to eat. I get my smoker Monday, I am in no hurry I don't want to ruin meat learning so I hope tto learn enough to be successful smoking meats and fish.

We just had a few inches of snow so I won't be smoking meats for a few weeks I am sure. if anyone has any tip and tricks please feel free to let me know.
 
Welcome and the basic 5 day course offered here is great.   I love jerky and always have a few bags in the freezer.    Favorite is jalapeno but recently did a chipotle version. It was great.
