Hello from Va, PA boy looking to learn

Hello all.
I grew up in a village, NW of PA. I had a great source for Venison half smokes and ring bologna. I rarely get back up that way, about 6 hours drive one way.
My uncle suggested that I could learn and make my own.
So, the hunt is on for the ring bologna I grew up with. Yummmm!
