Let me introduce myself.... I'm pretty new to smoking and live In Canada, British Columbia to be exact, and way up in the Northern part, just a couple of hours south of the Yukon border. It gets pretty cold here in Winter so basically I'm limited to spring/summer and fall to do any kind of smoking.
So far all I've smoked is fish, brook trout, rainbow and I have my first batch of Salmon in the smoker right now. All fish I caught myself, and I love the free/sustainability of harvesting and processing your own game. I made a batch of candied salmon last year that turned out great, and I've made a couple batches of moose jerky in the oven (not sure if that counts).
Anyways I'm using the cabelas 7-in-1 smoker, and so far I'm pretty happy with it, in the future perhaps I will upgrade as I get more into it. I'm looking forward to getting some great advice from all of you and learning from the experts.
