I've been on the sidelines here for a few months now.
And today is the day I decided to join your community.
Everything I've seen so far has been impressive; you've
actually helped me choose my new smoker, a Masterbuilt
Pro MDS 230S Dual Fuel Smoker.
So far I've smoked a 10# BB Bone-In and a couple of
batches of chicken quarters, all with the help of recipes
and instructions from members here. I've always had a
Brinkman charcoal barrel smoker and smoked nothing
but chickens, ducks and turkeys, so I'm looking forward
to expanding my recipe file.
 
I probably read a couple of hundred reviews on this forum regarding smokers. I wasn't aware of how popular the electric smokers are with so many members. I figured out the biggest advantage was probably being able to maintain a constant temp with elect smokers.
But I liked sitting around my old Brinkman and just tinkering with the vent/door, adding coals, etc. to maintain my temp, plus I'm recently retired so "playing around" and taking the time involved to do that wasn't a factor in deciding what to buy.
What really made my decision easy on the Masterbuilt Dual Fuel
Smoker (propane/charcoal) was a members comment. They basically said they "liked playing with fire more than playing with electricity". Don't remember who that was but, thanks.
I seasoned the smoker well before my first smoke and I've taken a members advice and added lava rocks in vented pan above the burner before smoking that first BB. That seems to really help dissipate the heat evenly.
My first 3 smokes didn't leave any leftovers, so I must be doing something right; THANKS to the recipes (dry rubs, finishing sauces, brines) I've gotten from members here.
