Hey guys,

Came here looking for a smoker to make jerky/sausage after bagging my first bull elk last month. Just pulled the trigger on that $150 amazon 30" MES deal and the amazen pellet package. I'll be running this on a condo balcony, so need to be mindful of neighbors with this setup. Seeing a lot more possibilities beyond just jerky with this smoker, can't wait to get started!

Welcome Herrmj! Just don't dress out that elk on the balcony. Your neighbors will be calling PETA police. Believe me, I know.

Ha!

Mr. elk is already in the freezer paper... just finished butchering him this weekend after hanging 2 weeks. Meat felt nice and tender, hoping the end result turns out well.
