Hey everyone! My name is Rob and I'm a firefighter from upstate New York in the Hudson Valley. Just bought a side fire box for a char griller and am getting into smoking. I'm the cook for my shift at the fire house and am trying to expand my cooking knowledge into smoking. Right now I'm learning how to control the heat and keep things below 250.
