Hello all, I have been a constant reader for a while now and decided to jump into the conversations!
I actually graduated college with a culinary arts degree so I am no stranger to cooking but recently got into smoking. I have been using a Holland charcoal grill as my smoker for a year or so. Have done quite a few butts, a couple pork loin, chicken quarters, whole chickens, and some trout. The forum has been awesome for ideas and a LOT of great information. Looking forward to talking to you all who share in the smoking addiction!! (My wife says I am teetering on having a smoking problem!)

PepsiMan, welcome to SMF!  Glad you are here and bringing the skills with you.  Hopefully, we can get some ideas from you too.  My wife says something similar about me, but never complains when I put the smoky goodness on the table.
