I have joined this forum to learn more about constructing an electric smoker and learning about how to smoke.  I have a metal fabrication shop that provides me with a lot of capability to cut, whack, grind, burn, bend, weld, machine, just about any kind of metal.  So, after looking at the pros/cons of the typical residential mass marketed smokers and their price - and comparing them to the professional higher grade units - and their price - I've decided to make my own smoker.  For years I've used charcoal in a Komado style ceramic cooker for smoking.  It does sort of OK, but I've gotten tired of dealing with the charcoal mess and chasing temp changes during a smoking process.  So, I'm going to make an electric unit that incorporates electronic controls.

I'll have questions later, as I firm up the design.  These smoking "boxes" are not all that complicated to build, but I'm going to have some questions about the heating / control portion of the smoker.
