I'm Richard from Katy, TX.

I've just been given a Smoke Hollow 30" Electric Smoker, though it hasn't come in yet, its supposed to be here tomorrow.  So we will be having fun trying it out this weekend.  I have not used a smoker before, so any input on getting started, what I need to do before cooking in it, etc would be greatly appreciated.

Currently we have a Char-Broil TRU infrared grill, which we are not too happy with.  Within a month, the ignitor switch broke and is hanging out.  For our next grill we will probably go back to Weber, unless I find some better info here.

Thanks for any input, advice, as well as having a great forum to learn from.  I'm looking forward to trying a breakfast fatty, never heard of it before, but found it here and it looks delicious.

Howdy neighbor!!!

 welcome to SMF from Louisiana. Check out the Free 5 day online course when you get time.

 never used the smoky hollow ,but do use MES 40" electric. Thin blue smoke is the key to good flavor and consistant temps around 230 degrees will make life easier.

  Check the search feature for smokey hollow modifications and tips .
