Hi, all. Looks like lots of good info here. For what it's worth, I recently moved from Louisville to the farthest reaches of northern Chicago suburbs - probably closer to Milwaukee in fact. Originally from western Wisconsin - land of lunch meat and locker plants. Lack of locally made summer sausage, etc. in Louisville led me to start making my own about 10 years ago. Since then I've made quite a bit of fully cooked sausage, semi hard fermented sausages, jerky, pastrami, cottage ham, along with some fresh sausages like bratwurst and italians. And BBQ once in a while.

I'm a real cheapskate, so always looking for bargains on meat, supplies, etc. Any advice for this area would be welcome.
