Hey Everyone,
Excited to officially join the offset smoker community with my recent purchase of the OK Joe's Highland (complete with all the many mods discussed on this fine forum and others). I have been smoking for a number of years, but mostly in a makeshift scenario via my six burner gas grill.
After spending too much time reading and too little time actually cooking, I decided to make the plunge into the offset world, and I'm currently writing this while I season the smoker to get started. The first cook will be a 7.75LB pork shoulder from Bluescreek Farms here in central Ohio.
I'm a native Clevelander, but have lived in Columbus for the better part of four years now, working in the neighborhood of Franklinton, which - if you have a chance - you should absolutely visit. We're home to world's largest makerspace, which is basically a "hip" way of saying: playground for tinkerers. Once we get comfortable with controlling the fire, and learn the ins and outs of the modestly-priced Highland, we're hoping to craft our own smoker at the shop. Should be a fun experience!
Anyway, I'm a nerd for all things BBQ, as we all are, and I'm always excited to learn from others and get advice on how to make my cooks even better.
