My hobby is cooking. I like to smoke, but with everyone's kids reaching adulthood, family get togethers are down. I'm down to cranking-up my smoker 3-4 times a year. But I've resolved to get back to smoking. I'll just put the extras in the freezer.
I've visited the forum periodically, but only just joined SMF. I've used the forum to refine my techniques. Yesterday discovered fatties on SMF, and was inspired to make a couple today for Thanksgiving. I also made a pork shoulder, a beef shoulder, a duck, and jalapeno poppers. The fatties were an especially big hit.
I have been smoking on a New Braunfels smoker for probably the last 6 years. Not sure of the model, and the manufacturer no longer exists. But the unit is similar to a Brinkman Smoke`N Pit Smoke King. The design is workable, but has some flaws. Basically, the smoker is a jack of all trades, but master of none. It's not a design I recommend.
