Just checking in here, been browsing a while, following the threads that I can glean technical info from for my own little projects, but as I'd also like to offer what I can to the community, and be less of a parasite.

I am located in the north end of The Golden State, formally educated as a chef, apprenticed as a butcher, and now back in school studying to profess literature.

Right now, I mostly smoke roast on my Webber Kettle, but am in the process of building a charcoal smoker from a 1955 vintage International Harvester Freezer. Work is slow as I'm on a budget, but I'd like to surf about and get some ideas for recipes and procedures from the forums here as I go.

My favorite animals to apply smoke to either oinked, flew or swam, and I grew up in a town that grew mostly apples, so I'm always looking for a clever means of incorporating them into my foods.

I'm running out of ideas to write right now, but I hope to meet everybody who reads this to here.

Welcome to SMF. There are a lot of very friendly & knowledgeable folks here to help you. I urge you to sign up for the free E-course. It will give you the basics, & even if you are an experienced smoker you may learn something new. Then start asking questions. Good luck & glad to have you aboard. Don't forget we all love Qview!

Got off work at 0400, and immediately got a chimney full of mesquite going to smoke roast a 4lb bone-in butt in the rain.

My family thinks I'm crazy...

Dude get used to it They all think were crazy. Think about it who takes photo's of their food in the middle of a dinner party. WE DO!

First off welcome Moose to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here. Now if you are really new then I would suggest that you sign up fir the 5-day E-course it free and it will give you the basics on smoking and a few recipes too. Here's a link to it:

then you will have a method to your newly found madness and believe me it will be a madness. Then when you start smoking things you will have to learn how to post the pictures / Qview

Now the next thing you have to do is run out and get something to smoke. Then just smoke it and if you have any questions just post  them here and we will answer all your questions that you might have. Moose, welcome to the crazy world of SMF, yes we are all a bit touched in the head or at least our family and friends think so.  My other friends have covered about every thing but just so you don't forget, 1) Sign up for the free 5 day E-Course, I had been smoking meat for about 6 years when I got it and learned alot.  2) In the WIKI section under A is a list of Acronyms, print you off a copy and keep it by the computer, it will explain what we are talking about sometimes.  3)Use the Search bar at the top of the page and the WIKI section there is more to read there than in 100 cook books and it will help you find answers fast.  4) Probably the most important, the only dumb question that you can ask here is the one you do not ask, so don't be afraid to ask if you can't find the answer.  Again Moose, we are glad to have  you on board, keep us update on that smoker build and anything you smoke, we will help you and I know that you will be able to help us.
