I'm currently in Charlotte, NC. I've only been smoking a year. I'm looking forward to learning more from you guys. I have a 14.5 Smoky Webber and a MES 30 Bluetooth unit. Because of this site, I purchased the A-Maze- N 5x8 pellet smoker but I haven't used it yet. I'm gonna need some clarification as to where I should put it. I read a lot of the the threads but still need some help. Do you remove the water pan, keep it???? How does removing the water pan effect the food, etc... do you place the pellet smoker above the wood chip loader? I would love some help withproperly get this started. I've seen the "mailbox post" but I'd like to start off slow.

Welcome from SC, Frank. It's really good to have you here on this great site. There are a lot of fine folks here who are always eager to share their ideas, recipes and tips. You are already off to a great start. Post your questions, just like you did and there will be lots of folks who will have amswers. Sorry I can't help you on this one. I don't know anything about your smoker.
