Hi all,
I'm making a pellet smoker out of a ces cor bread proofer I have. Can someone help me. I seen a video and instruction on the build on a forum somewhere but not I can't find it. I do remember one of the guys saying he should of left the proofer in working order for some reason. Can anyone help me on this.

You’re likely thinking of the builds where people keep the proofer’s original heating element and thermostat active to help with cold smoking or holding temps. I’ve seen a few guys regret gutting the electronics because that insulated cabinet is actually amazing for resting briskets or proofing dough at a steady 100°F when you aren't smoking. If you haven't ripped the guts out yet, try mounting your pellet hopper assembly on the side while keeping the original wiring intact; it gives you a way more versatile unit for the winter months.
