Hello Everybody! My name is Max and I live Menlo Park,Ca. I have been grilling on my standard webber now for many years but recently received an early x-mas present from my wife consisting of a brand new Brinkman Trailmaster Vertical Smoker. I have it assembled including RTV on all of the joints and purchased a digital thermometer with probe for more accurate temps. I have cured it as per recommendations on this site and have 2 successful smokes under my belt. The first consisted of (4)-3Lb tri-tips which came out excellent. I was a little nervous being my first time smoke with quite a pit of precious beef on the line, but I ran between 200*-210* for about 4-1/2 hrs. The meat came out great. The second run was a single rack of baby back ribs that came out pretty tasty. I have been using a mix of cherry wood and hickory along with my kingsford charcoal and have been very happy with the flavor but I can't wait to try other types of wood as well. My next investment will be a gasket/latch kit and probably a digital stoker down the road. As I said, I am new to the game so any advice or tips are appreciated. Happy smoking everyone!
