My name is Dave nick name (Bungy) I'm from Bloomer Wisconsin,I've been working with meat for as long as I can remember,working with meat as a very young boy with my Father, Grandpa,on the farm in the fall butchering in them days we only did country style sausage,blood sausage and liver sausage,I am enjoying doing many more things now and learning something new all most every time I make something,I remember one thing that Grandpa would all ways say,your only going to get out of it what you put in it,he would all ways use the best cuts,I really enjoy this Smoking meat forums.com very glad to be a member.Thank you everyone very much
